Brunch at Yan Ting, the St. Regis’s Cantonese restaurant, is an event worth putting on your Sunday best for. The place is as opulent as you might expect from one of Singapore’s best hotels, while the fare is a blend of traditional Cantonese dishes with some modern flourishes.
Don’t expect to find all the usual suspects on the menu. We enjoyed steamed bean-curd rolls in abalone sauce, dumplings of crispy shrimp and Chinese chives, and a winning spinach and shimeji mushroom roulette.
Dim sum aside, the crispy roast pork was the best I’ve ever had, while the stir-fried scallops were fresh and tender. Included in the brunch is a portion of lobster, with a choice of three methods of preparation. My wok-baked half came sprinkled with crispy garlic slivers.
It’s all-you-can-eat, but servings are kept small so, as long as you have the willpower, you can save room for dessert. I opted for a mango pudding that was studded with chunks of the fresh fruit. Take a peek at the a la carte menu while you’re there. We found a homemade almond tea that was fragrant and delicious.
