Continuing our series of great recipes you can try at home, Sharon Lim (@patchmasterchef) shares a frittata recipe she loves. “This is best served with a slice of sourdough and avocado, along with organic iceberg lettuce and tomatoes,” says Sharon.
Frittata Recipe – Ingredients
- 6-8 Selva Shrimp
- 2 free-range eggs
- ¼ red capsicum
- 1 garlic bulb
- 20ml of milk
- Salt and pepper
- Chilli flakes
- Parsley
- Olive oil
Frittata Recipe – Method
- Preheat the oven to 180 degrees Celsius.
- Marinade prawns with salt and pepper.
- Whisk eggs with milk and a pinch of salt and pepper.
- Finely chop the garlic and dice the capsicum.
- Heat up 2 tablespoons of olive oil in an oven-safe pan and sauté the garlic.
- Add the prawns and cook for half a minute on each side.
- Remove the prawns and pour in ¾ of the egg mixture.
- Throw in the capsicum and put into the oven for 2 to 3 minutes.
- Remove from oven and arrange the prawns in the pan.
- Pour in the remaining egg mixture and sprinkle with parsley.
- Return to the oven for another 3 to 5 minutes to fully cook the prawns and set the top. Prawns can easily overcook so keep a close eye.
- Season with chilli flakes (optional).
