New signature items include Pear & Grape Crumble Tart ($5), Seven Tails XO Canelé ($4) and Kombu & Seaweed Flatbread ($8). Cooking with a zero waste philosophy in mind, Panamericana’s latest dishes are made to elevate the main ingredient into a singular, star dish. Take, for example, the Binchotan-seared Hokkaido Scallops ($38), where every part of the scallop is put to use. Even the trimmings are made into crunchy, addictive scallop crackers! Meanwhile, the pork floss in the Land & Sea “Noodles” dish ($40) is made using the meat from the ham hock broth. The restaurant’s culinary approach ensures that no ingredient goes to waste, with every dish thoughtfully created with sustainability in mind. Other must-try new offerings include Spanish Suckling Pig Belly and Charred Savoy Cabbage.

It features fizz-forward cocktails and a refresh of its signature cocktails, drawing inspiration from regions located along the Pan-American Highway.
