Start with Moonbow Oyster Bay; delicate premium oysters are ice-smoked at the table and topped with yuzu gel, cucumber pearl and yuzu granita with a side of oyster leaves. Or opt for the Crustaceans Bisque or the Jerusalem Artichoke Soup, complete with 64-degree sous vide egg and caviar.
Meat lovers will enjoy the perfectly grilled, four-day-aged Young Pork Tomahawk made with roasted garlic, caramelised lime, pineapple compote and a delicious barbecue glaze. Another favourite is Salmon Fish & Chips; it’s deep-fried in a light, flavourful batter and served with mashed edamame, potato “rock” and honey mustard dip. The Black Berry Four-Grain Healthy Rice with Roasted Pork Jowl “Ton Toro” is dish that the chef created for his mother.
The desserts are divine, too. Order the Treasure Sweet Souffle Drawer (serves two to three), and you’ll get the chance to sample not only a scrumptious Pistachio Chocolate Soufflé, but also Mango Passion Mousse, Petite Apple Crumble Tartlets, Yuzu Star Anise Paté Fruit and Truffle Cheese Macaroon.
