Hathaway embraces local culinary heritage such as Indian, Malay and Peranakan food and interlaces it with French and Middle Eastern influences. The result is familiar favourites with a twist that are downright delicious. Take the Pengat Pisang French Toast, for example, which sees a brioche served with caramelised bananas stewed in fragrant coconut milk, giving it that unmistakable Asian influence. Yum!
