Grand Copthorne Waterfront Hotel Singapore’s Thailand Flavourscape Buffet returns from 13 July to 23 August with authentic Thai food and regional dishes ranging from Phuket-style pork belly to fiery tom yum fried rice. Following the success of last year’s Phuket Flavourscape Buffet, this year’s edition, held in partnership with the Royal Thai Embassy Singapore, expands beyond Phuket to showcase flavours from across Thailand. Read on for the six dishes we’d head straight for at this Thai buffet in Singapore, plus an exclusive launch-night offer for EL readers!
Meet the chefs behind this Thai buffet
This culinary experience is a six-hands collaboration between the hotel’s culinary team led by Executive Chef David Toh, alongside two guest chefs from Thailand: Chef Ratchadawan “Chef Noon” Thongwichien from M Social Hotel Phuket and MasterChef UK finalist Chef Nawamin “Boss” Pinpathomrat, chef-owner of REALM, which has three outlets in Thailand.
The buffet spread explores everything from Thai street food favourites to richer regional comfort dishes layered with chilli, lime, coconut, fish sauce and fragrant herbs. And yes – the spice levels are there!
Six dishes not to miss
- Tom Yum Fried Rice with Grilled River Prawn
- Phuket-Style Braised Pork Belly
- Deep-Fried Seabass with Pineapple Chilli Sauce
- Five-Spice Pork Belly with Shallots and Garlic
- Andaman Seafood Curry
- Grand Tom Yum Goong (Thailand’s famous hot and sour prawn soup, upgraded with river prawns!)
