Watch this: Delicious recipes for cooking with vegetables from 1-Altitude Chef Chris Millar

Episode 5 is veggie-tastic! Chef Chris Millar demonstrates three easy-peasy, yet very impressive vegetable recipes including a scrumptious carrot dish, a roasted & pureed cauliflower appetiser, and the curiously named ‘Fainting Priest’. They’re all a part of our #eatyourveggies themed YouTube cooking show, Chris’ Takeaway, available on our Expat Living SG YouTube channel.

 

First on the menu is Turkish Imambayildi, (also known as Fainting Priest – Chris will explain all!). Here’s what you’ll need: eggplant, onions, Roma tomatoes, garlic (of course!) and a plethora of spices; coriander, cumin, onion, fresh mint and parsley, olive oil, cinnamon powder, white wine, bay leaves and thyme…amazing!

Next up, a stunning carrot, lentil and date recipe made with green lentils, Egyptian dates (yip), carrots, garlic, bay leaves, thyme, white wine and water, red onions, brandy, pistachio oil/ olive oil, Vadouvan spice and oregano (you got all that?). This is then followed by a delicious roasted cauliflower & puree appetiser with white wine, chili flakes, lemon, butter, tahini, olive oil, whole pistachio nuts, pomegranate, fresh mint, soft feta cheese and of course, cauliflower!

So grab that salt, olive oil and your mortar & pestle and get grinding! Happy cooking (and eating!)
