Just when you thought learning how to prepare a salmon wrap in your hotel room while travelling wasn’t eye-candy enough, in week two of our YouTube series, Chris’ Takeaway, Chef Chris Millar takes us to Singapore’s Tekka Market, where we do a spot of wet market shopping and stock up on a bounty of fresh vegetables. Chris also shows us how to choose the freshest fish and Sri Lankan crab in the market. Score!
From there, we hop on a boat with the crew (sans the motion sickness, mind you) to a traditional kelong, where Chef Chris shows us how to prepare Sri Lankan Crab and Green Mango Salad. Later, we’re invited to BBQ using the Indonesian-style method of fried coconut husks to flavour our own Hamachi Collars stuffed with lemongrass, tamarind paste, palm sugar young ginger and awesomeness.
