Verve, meaning vigour, spirit and enthusiasm, perfectly expresses the personalities of owners Rob and Karen, who took over the previous Italian restaurant and turned it into a bar and bistro with a genuine Italian flavour.
The building’s history dates back to before World War II, when the building formed part of Gillman Barracks. It was later transformed into a cinema for British troops. You can still see the AKC (Army Kinema Corporation) logo on the wall.
Seasoning resonates through each dish, as does the ethos of “simple things done right”. The extensive menu includes ravioli parcels filled with lemongrass chicken, slipper lobster linguine, and confit of duck fettucine. Grilled squid salad was back by popular demand when we visited – and I could see why!
It almost seems a shame to order pizza when there is such a varied menu, but it’s hard to resist these thin-crust beauties, creatively named after characters in The Godfather. They also offer pizza toppings such as Rendang chicken and Peking duck.
The Verve kitchen began making its own mouth-watering ice cream when Rob and Karen became dissatisfied with their suppliers. It’s difficult to choose between the delicious-sounding desserts, and the same goes for the selection of wines. Verve’s own label is organic; best sipped chilled, out on the deck.
Set in the natural bush of Gillman Village (just below Originals and near The Shophouse), Verve might seem off the beaten track, yet it’s easy to get to.
