Catch Michelin-starred British chef Alyn Williams at The Singapore Resort & Spa Sentosa from 13 to 17 August at The Cliff. His London restaurant Alyn Williams at The Westbury has been awarded a Michelin star, three AA rosettes, and have been voted 15th in UK National Restaurant Awards. And Alyn personally was named Uk’s Best Chef of the Year in 2012.
What can you expect from Mr Williams? How about foie gras like you’ve likely never had it before – in a semifreddo with lemon curd, hazelnuts and drops of coffee – and barbecued Welsh lamb served with a 25-ingredient dukka, superbly smokey aubergine and a bed of light tzatziki. For sweet endings, he’s doing a lick-the-glass-worthy caramelised white chocolate panna cotta with honeycomb and passionfruit foam.
His stint on the Red Dot wraps up with a Sparkling Sunday Champagne Brunch of 17 August with items like huevos rancheros and smoked salmon with potato pancakes, caper creme fraiche and crispy bacon horseradish.
