Sip and chat, sip and chat, then dive into the Live Seafood Station with its fresh sashimi platter and huge selection of imported catch (think Australian half-shell scallops, Canadian Maine lobsters, Spain yabbies and live oysters from Canada, Australia and France shucked by Opus’ chefs).
Ready for a nosey at the Live Carving Station? Load up on protein with Australian Grain-fed Prime Ribs, Honey Mustard Glazed Pork Rack and Slow-grilled Herb-roasted Baby Chicken. And, when only an open-flame charcoal grill will do, catch the chefs in action as they sizzle chunks of premium Australian cuts, Wagyu Flank Steak, Lamb Chops and Rangers Valley Grain-fed Beef Tenderloin over white-hot charcoal.
If, at any stage, you feel like you’re ready to turn in your napkin, sit it out because you won’t want to miss the specialty dishes prepared à la minute – everything from Pan-fried Foie Gras with Apple and Passion Fruit, fresh homemade Italian Maccheroni Pasta with juicy Maine lobster meat and Yabbies, and signature homemade Scotch Egg with Black Truffle Hollandaise.
