So, what’s the art to brunching? Forget fashionably late – we like to get there as doors open (it’s on the stroke of noon at Hilton Singapore). And, regardless of whether you’re a Sunday brunch virgin or have clinked more than your fair share of free-flow bubbly during your stint in Singapore, pace is everything, so kick start your gourmet experience at Hilton Singapore’s Sunday Champagne Brunch with a selection of mouthfuls from the Smorgasbord Station. Be picky as there are over 20 types cheeses from Italy, France and Switzerland, as well as thinly-sliced à la minute Charcuterie of Imported Whole Leg Iberico Ham, Lomo Ham and Saucisson Sec Cured Meat.

Sip and chat, sip and chat, then dive into the Live Seafood Station with its fresh sashimi platter and huge selection of imported catch (think Australian half-shell scallops, Canadian Maine lobsters, Spain yabbies and live oysters from Canada, Australia and France shucked by Opus’ chefs).

Ready for a nosey at the Live Carving Station? Load up on protein with Australian Grain-fed Prime Ribs, Honey Mustard Glazed Pork Rack and Slow-grilled Herb-roasted Baby Chicken. And, when only an open-flame charcoal grill will do, catch the chefs in action as they sizzle chunks of premium Australian cuts, Wagyu Flank Steak, Lamb Chops and Rangers Valley Grain-fed Beef Tenderloin over white-hot charcoal.

 

 

If, at any stage, you feel like you’re ready to turn in your napkin, sit it out because you won’t want to miss the specialty dishes prepared à la minute – everything from Pan-fried Foie Gras with Apple and Passion Fruit, fresh homemade Italian Maccheroni Pasta with juicy Maine lobster meat and Yabbies, and signature homemade Scotch Egg with Black Truffle Hollandaise.

What’s for afters? Or what isn’t more like, with a Caramel Hazelnut Chocolate Fountain, torched Crème Brulee, delicate Green Tea and Strawberry Tarts, Macaroons, Pralines and refreshing homemade gelatos. Little brunchers will love the multi-layered Rainbow Cake!
