Located on the 24th floor, overlooking the lights of Singapore, BLU has a huge advantage. Add in a special his-and-hers menu for Valentine’s night and this restaurant is high on the list.

We sampled a combination of the special menu and other creations by chef Kevin Cherkas. The first, tiny morsels of caviar in a delicate waffle, was followed by an exquisite lobster Thermidore, served with Parmesan chips and topped with a light and creamy lobster foam. The combination of cherry, pistachio and a splash of chocolate with the foie gras – or alternatively, cream of foie gras with a base of caramel – is both exceptional and divine.

Sparkling Grape, a carbonated grape in a sorbet, cleansed our palates in preparation for the creatively presented main courses of beef and veal.

The tastes and textures in the desserts that followed were equally creative and delicious: the Oreo, a chocolate extravaganza, and a delicate lemon meringue.

There’s a lighter menu for the ladies, and a more solid one for the men. The cost of $588++ per couple includes a bottle of Krug champagne.
