Restaurant review: Prego in Singapore

The Fairmont, Bras Basah Road
+65 6431 6156

Prego has a big, bright, cosmopolitan feel and is perfect for a ladies’ lunch – ideally, ladies who are  not watching their weight. Angela and I are shown to a lovely window table from which to watch the Friday lunchtime traffic strolling by. By one o’clock, the huge restaurant is full of diners, but the breezy, friendly service never falters.

After a mixed antipasti of caprese salad, proscuitto, melon, rocket and yummy balsamic figs, Chef Salvatore Silvestrone suggests we share the potato gnocchi with broccoli, delectably enhanced with gorgonzola, and the linguine gallinaci, a triumph of trumpet mushrooms and truffles, vermouth and garlic butter. Both main courses, too, are to die for. The delicate merluzzo (cod), the most popular dish on the menu, is inspirationally paired with lentils and fragrant with a pesto of basil from the chef’s own garden, while the generous portion of beef tenderloin is incredibly tasty.

It’s impossible to do justice to dessert after such a feast, but we can recommend the ricotta cheesecake and, of course, in the same way as just one glass of Prosecco can only do you good – even at lunchtime – everyone can find a little space for a couple of spoonfuls of tiramisu.
