Restaurant review: Pasta Fresca da Salvatore

Pasta Fresca da Salvatore
Cuppage Terrace
+65 6836 0739

For a more romantic ambience, choose one of the alfresco tables at this latest branch of Pasta Fresca, housed in the row of newly restored Peranakan shophouses that is Cuppage Terrace.

Executive chef Domenico Truglia has made Pasta Fresca famous for authentic Italian food made with simple, fresh, good ingredients, served with warmth and informality.

We started with finger-licking bruschetta with fresh basil leaves, garlic and tomato; bresaola, a tasty airdried and salted beef; and Parma ham wrapped around hot crostini. The porcini mushroom risotto is a must to share, a large portion loaded with Parmesan cheese and served al dente.

We also loved the tagliata di manzo, sliced beef tenderloin that, though not thick, was beautifully seared for maximum flavour and perfectly underdone. Again, it was ideal for two.

Even when you think you’re full, there’s always room to share a tiramisu, isn’t there? This one was very good.

Pasta Fresca is excellent value. Appetisers and soups range from $7 to $16, meat and fish dishes from $26 to $34; pizzas are $18.90 and desserts $8.30. The mainly Italian wines are generally under $60, and many are served by the glass.
