The owners of La Forketta waited years to get their desired corner spot at the top of Dempsey Hill, and it was worth the wait. What’s more, the space has been wonderfully restored; the high ceilings and exposed beams of the former barracks contrast with the cosy atmosphere around the pizza furnace.
It’s run by a husband and wife team (he a genuine southern Italian), who pride themselves on the fact that all of the ingredients, down to the flour in the dough, are shipped in from Italy. And they refuse in any way to compromise the original recipes to suit local tastes. Such discipline pays off, the quality shining through.
We started our feast with antipasti della casa ($28) and seafood antipasti ($35), both of which were delicious. To follow, we shared the prosciutto e rucola pizza ($29), made in traditional thin-crust Italian style and heaped with Parma ham and rocket. “Without a doubt the best pizza I’ve had in Singapore,” my husband declared, and I’m inclined to agree. Though rich, the sauce of the troccoli with capsicums and prawns ($29) did not overpower the prawns, and the veal rack ($45) was tender and beautifully cooked.
My chocolate cake ($11) was fine, but Jonathan’s tiramisu (also $11) was spectacular: cue food envy. And at $12 per glass, the house wine, a Montepulciano D’Abruzzo DOC, was the perfect accompaniment to the meal.
