Recipe: Spanish Paella and Calamari

Paella is lovingly known as Spain's national dish 

Signature Paella Valencia

(serves 6)

• 320g Bomba paella rice

• 40ml olive oil

• 100g diced onion

• 50ml red capsicum, diced

• 40g diced tomato

• 10g ground almond

• 5g parsley

• 150g boneless chicken leg, cubed

• 35g Spanish chorizo sausage

• 8 tiger prawns

• 80g squid rings

• 8 mussels on the half shell

• 1 litre water

• 3g paprika powder

• 4g salt

• pinch of saffron

• pepper to taste

• 90g green peas

Method

1.Heat up the paella pan and add the olive oil

2.Sautée the onion, ground almond and diced capsicum for a few minutes until the onion is golden brown

3.Add tomato, squid, chicken, prawns and mussels and sauté until half-cooked

4.Remove from pan and set aside

5. Add the rice to the paella pan and sauté for 3 minutes

6. Add the water and bring to the boil

7.Add paprika, salt, saffron and pepper

8.Simmer uncovered until the rice is almost tender

9.Add the prawns, mussels, chorizo and green peas; cover with foil.

10.Turn down the heat to and let the paella sit for 5 to 10 minutes until the rice is cooked to taste sprinkle with parsley

 

Calamares a la Pancha (Grilled Squid)

(serves 1)

3 x 60g pieces of fresh squid

8ml olive oil

pinch of chopped parsley

pinch of salt flakes

Method

1. Heat olive oil in a grilling pan

2. Add the squid and grill until cooked

3. Place on a plate and sprinkle with parsley and salt
