Recipe: Goat’s Cheese Tarts


Ingredients ( makes 4)

  • 1 St Maure goat’s cheese

  • 1 packet pre-rolled puff pastry sheets

  • 5 grams rosemary chopped

  • 5 grams thyme, chopped

  • 10 grams pesto

  • 2 red capsicums, roasted and sliced


  1. Slice the goat’s cheese into 12 pieces, each 1cm thick

  2. Mix the thyme and rosemary with the pesto and brush the mixture onto the goat’s cheese

  3. Cut one piece of puff pastry into four squares

  4. In middle of each piece of puff pastry, place a quarter of the roasted capsicum

  5. Place three pieces of goat’s cheese on the capsicum, overlapping them slightly

  6. Bring up the sides of the puff pastry and pinch them together around the filling; it should look like a star

  7. Place the four tarts on a greased baking tray and bake in an oven preheated to 190 degrees Celsius till golden brown (about 12 minutes)
