Recipe: Fish and Chips

Ingredients

250g cod
30g tartar sauce
15g malt vinegar
half a fresh lemon
vegetable oil for frying
100g saffron mustard batter


SAFFRON MUSTARD BATTER
Ingredients

225g flour
225g corn flour
1 can soda water
Pinch of salt
10ml saffron water
20g Pommery mustard
Pinch of baking powder


Method

1.  Whisk the flour with soda water until smooth.
2.  Slowly add corn flour, baking powder and salt and whisk until smooth.
3.  Add the Pommery mustard and slowly add the saffron water.

TARTAR SAUCE
Ingredients

40g mayonnaise
2g chives, chopped
Pinch of salt
1 boiled egg, finely diced
10g gherkin, finely diced
Pinch of cayenne pepper

Method
1.  Blend all ingredients.
2.  Season to tast

Cod
1.  Season fish with salt and lemon juice.
2.  Dust with flour and dip in batter.
3.  Fry in hot oil until golden brown.
4.  Place fish on kitchen roll to absorb excess oil and serve with French fries, malt vinegar, lemon and tartar
     sauce.
