2 teaspoons black peppercorns
350 grams beef, sliced into strips and marinated*
1 tablespoon ginger, sliced
1 large green pepper cut into strips
4 packets fresh udon noodles, cut so they’re not too long
1/4 cup low-sodium light soy sauce
2 tablespoons mirin
1 tablespoon sugar
1 tablespoon vegetable oil
a few drops of sesame oil
salt to taste
1/2 teaspoon grated ginger

1/2 teaspoon bicarbonate of soda (acts as a tenderiser; optional)
Marinate beef for at least 30 minutes before cooking.
Dry-fry peppercorns and leave to cool. Crush them with a mortar and pestle.
Heat vegetable oil and fry sliced ginger for one minute before adding beef.
Fry the beef until it is cooked. Add the green pepper strips and crushed black pepper and stir-fry for another minute.
Add soy sauce, mirin and sugar, mixing thoroughly. Add salt or other seasoning if desired.
Sprinkle noodles with sesame oil and mix through. Serve immediately.
