Banana Pancakes🍌
Makes around 8 pancakes

Ingredients:
• 1 3/4 cup plain flour
• 3 1/2 teaspoons baking powder
• 1 teaspoon salt
• 1 tablespoon white sugar
• 1 3/8 cup whole milk
• 1 egg
• 3 tablespoons melted butter
• 2 teaspoons vanilla
• 3 bananas, mashed

Directions:
1. Whisk the dry ingredients together.
2. In a separate bowl, whisk the wet ingredients together.
3. Slowly add the dry ingredients to the wet ingredients. Whisk until smooth. Having a few lumps in the batter is okay.
4. Scoop a quarter-cup of batter at a time and cook on a non-stick pan with butter. You’ll know it’s ready to flip when bubbles form on one side.
5. If you’re adding toppings, throw them in right after you put the batter in the pan and before bubbles form. You can also use your spatula to press them down.
6. Serve with syrup and butter🍴

Expat Living had two team days out making pizza and focaccia bread at the @bakerandcooksg school @brettschneiders. It was great fun and very messy! But most importantly it all tasted delicious 🍕❤️

What better way to start off a new week than with a yummy recipe! Thanks Sasha from @sashasfinefoods for this one🍽 Baked Chorizo Orzo with Hake

Ingredients:
• 4 hake fillets
• 3 tablespoons olive oil
• 100g chorizo, finely chopped
• 1 onion, finely chopped
• 3 cloves garlic, sliced
• A few sprigs of thyme
• 250g orzo
• 200ml cider
• 500ml chicken stock
• Small bunch of flat-leaf parsley, chopped

Directions:
1. Preheat the oven to 190°C (or fan 170°C) and heat 1 tablespoon of the olive oil in a shallow 30cm casserole dish.
2. Cook the chorizo for four to five minutes or until crisp and the fat has turned a deep red colour.
3. Turn the heat to low and add the onion, garlic and thyme. Cook for 10 minutes until the onion is soft, then throw in the orzo and toss until every grain is coated in the oil.
4. Stir in the cider, stock, salt and pepper to taste, and bring to a boil.
5. Put into the oven for 10 minutes, then remove and nestle in the hake fillets.
6. Bake for another 15 minutes until the orzo and hake are cooked.
7. Top with parsley and serve🌱
