Celebrating Christmas and New Year in the tropics

Updated on 6th April 2018 by Lindsay Yap |

What better way to spend the December holidays than to have a Christmas getaway? If you don’t want to head too far, Singapore’s close neighbour Thailand is always a fabulous option. And, if you take the family to stunning InterContinental Samui Baan Taling Ngam Resort on Koh Samui’s southwest coast, you’ll have the chance to enjoy an exciting line-up of festive activities and dining experiences.

Deck The Halls

From Christmas Eve to Christmas Day, the luxury beachside resort will be bustling with activity and festive cheer. Here’s a taste of what to expect.

Christmas Eve Buffet Feast

On the night before Christmas, dress in your festive best and head to the lobby for a pre-dinner cocktail. From there, it’s on to Amber restaurant, which will be all decked out for the Christmas Eve Buffet Feast. An indulgent spread of traditional roast carvings, fresh seafood and yummy desserts is on the menu, including live cooking stations for dishes prepared à la minute. You’ll be entertained by a live musical trio throughout the night and little diners will have plenty of fun activities to keep them busy and happy while the adults eat.

When? 24 December, from 6.30pm (cocktail reception)

How much? THB4,900 per person (approximately S$200), including cocktail reception, and THB2,950 per child (ages six to 12 years)

How cute! Love this Easter twist on devilled eggs 🐣Thanks @expat_kitchen! Instructions below ✨ Full recipe on our site
.
.
.
.Instructions:1. Peel hard-boiled eggs. With a sharp knife, slice off a very thin layer from the base of the egg so it can stand. Cut a generous top off the egg, and set top aside. Using a small melon baller, scoop out the yolk carefully (be careful not to break the white part!).
2. In a medium mixing bowl, combine 10 cooked yolks and mash well with a fork. Add mayonnaise, Dijon, garlic powder and salt. Mash everything together until smooth. Transfer mixture to Ziploc or pastry bag and pipe generously into egg bases. Place top 1/3 back over the base and press down slightly to adhere.
3. For the eyes, poke through an olive with a plastic straw several times, then gently squeeze down the straw, and the little circles of olives will pop right out. For the beaks, thinly slice a few rings of carrot and cut each ring into sixths. Insert two olive spots for the eyes and two carrots wedges for the beak. Set chicks on a platter and garnish with noodles, or parsley or dill to give them that “free range” feel.
